Ingredients
  

  • 1 Quart Ice Cream of your choice
  • 1 1/4 Sticks Unsalted Butter melted
  • 1/4 cup Olive Oil
  • 1 1/2 cups Light Brown Sugar
  • 1 Large Egg
  • 1 Egg Yolk
  • 2 tsp Vanilla Extract
  • 1/2 tsp Fine Sea Salt
  • 1/4 tsp Baking Powder
  • 1 1/2 cups All Purpose Flour
  • 1 cup Chocolate Chips
  • 1 cup Chopped Walnuts

Instructions
 

  • Preheat the oven to 350°F.
  • Line an 9 x 13 metal pan with parchment paper and take a quart of ice cream out of the freezer to soften.
  • In a large bowl, or the base of your stand mixer, combine the sugar to the melted butter (still hot is best) until well combined. Let cool to room temp.
  • Add the egg, egg yolk, and vanilla. Mix until smooth.
  • Add the salt, baking powder, and flour until just combined.
  • Gently stir in chocolate chips and walnuts.
  • Pour the batter into the prepared pan and level it out.
  • Bake for 20-25 minutes until edges are golden brown. Let cool and put the pan in the freezer.
  • While your cookies bake, line a Pyrex with plastic wrap and spread your ice cream into a single layer. Fold the plastic wrap over the top, flatten, and put it back in the freezer.
  • When your cookies are cold, slice down the middle and flip one half over.
  • Grab your ice cream from the freezer, unwrap it, and place it on top of the upside down cookie halve. Top with the other and slice into bars.
  • Wrap each sandwich in parchment paper and place in an airtight container for freezing.
