Creamy Chicken & Mushroom Orzo

Tender, juicy chicken, veggies, and pasta all nestled in a silky smooth sauce.  Made in just one pan and minimal clean up.

Total Time 30 minutes

Ingredients
  

  • 2 lbs of chicken breast or thighs
  • 1 8 oz package mushrooms sliced
  • 2 small zucchinis diced
  • 1 medium onion diced
  • 4 garlic cloves thinly sliced
  • Spices: 1 tsp onion powder 1 tsp garlic powder, ½ tsp paprika, pinch of red pepper flakes
  • 1 ½ cups orzo
  • 3 cups chicken broth
  • 1 cup finely grated parmesan cheese
  • Salt and pepper to taste
  • Parsley for garnish roughly chopped

Instructions
 

  • Pat chicken dry, season with salt & pepper.
  • Heat a large skillet over medium-high heat.  Add 2 tbsp olive oil, when it starts to shimmer, add your chicken and sprinkle with spices listed or of your choice.
  • Cook chicken undisturbed for 8 minutes, until it begins to brown on the bottom.  Set aside. It will finish cooking later.
  • Reduce heat to medium, add onion, sauté until starting to soften.
  • Add garlic, and sauté until fragrant.
  • Add mushrooms and zucchini, cook until tender, 5-8 minutes.
  • Add in the orzo, then chicken stock. Cook for 5 minutes. Stirring occasionally.
  • Add cheese and mix to combine.
  • Add back your chicken with the crispy side facing up. Continue to simmer for 5-7 more minutes, until chicken is cooked through, and liquid is absorbed.
  • Fluff orzo with a fork, sprinkle with parsley, and enjoy.
